What is a French Omelet?

The French style omelet, known for its smooth surface and pale exterior, is very famous across Europe. Unlike the conventional American omelet, which is cooked through, it has a creamy, moist texture which renders it unique and a good fit for quick preparation on a Cinder Grill.  Which style do you prefer ?

Serves 1

INGREDIENTS:

  • 3 eggs, well beaten
  • 1/2 tbsp butter
  • 1 tbsp chives, finely sliced
  • 3 tbsp soft cheese (such as boursin or fromage blanc)
  • Salt
  • Pepper

METHOD:

  1. Set your Cinder device to 200°F. Add the butter and spread to coat the plate. Very slowly, pour the eggs onto the plate, gently stirring and spreading with a spatula. Season with salt and pepper.

  2. Leave the eggs for around 5 minutes, until just set, then add the soft cheese and chives in a horizontal line across the center of the plate.

  3. Gently release the egg from the plate and roll, top to bottom into a thin cylinder.

  4. Transfer to a plate, top with a little butter, flaky salt, and any leftover chives.
